Lemon Cake

A lemon cake recipe from Elaine C. Atlow's personal collection, written on her personal stationery. The cake is baked in a loaf pan at 375°F for about 30 minutes, and can be used with a filling.

Ingredients

  • 1⅓ cup (320ml) flour
  • 1½ tsp (8ml) baking powder
  • ¼ cup (60ml) margarine
  • ¾ cup (180ml) sugar
  • Blend, 1 tsp (5ml) vanilla
  • 1 egg

Instructions

    Cream margarine, sugar. Add egg.

    Slowly mix in flour and dry ingredients. Should be blended with flour.

    Pour batter into a loaf pan, a 3" deep long one, or it will be too thick.

    Add lemon rind for one kind.

    Keep seeds and use a strainer.

    Fresh lemon peel is best. Bake 375.
