Ingredients

  • 3 lbs (1360g) chicken cut up
  • 2 tbsp (30ml)s oil
  • 8 small onions
  • 4 carrots cut into thirds
  • 4 scallions sliced
  • 1 tsp (5ml) salt
  • 1 tsp (5ml) pepper
  • 2 cups (480ml) dry white wine
  • 1 lb (455g) mushrooms
  • 2 tbsp (30ml)s potato starch or corn starch
  • 2 tbsp (30ml)s water

    Heat oil in Dutch Oven.

    Add chicken & brown on all sides.

    Remove chicken.

    Pour off all but 2 tbsps oil.

    Add vegetables, saute until onions brown.

    Return chicken to pot.

    Sprinkle in salt and pepper.

    Pour in wine.

    Simmer covered 25 min.

    Add mushrooms, simmer covered for another 20 minutes.

    Blend together potato starch and water.

    Stir into liquid in pot and cook for another minute.
