Ingredients

  • 6 eggs
  • 225g ground walnuts
  • 3-4 glasses carrot (grated)
  • 1/2 cup (120ml) oil
  • 1 1/2 cup (360ml) sugar
  • 2 cups (480ml) flour
  • 2 tsp (10ml) baking powder
  • 1/2 tsp (3ml) soda
  • 1 small jar Maraschino Cherries (drained & cut)

    Separate eggs.

    Beat whites till foamy.

    Add 1/2 of the sugar & beat well.

    Then add yolks & oil & whites.

    Then add remaining ingredients.

    Bake in an 8x12 pan for 1 hour at 350°.
