
Black Bean Soup
A hearty black bean soup made with sautéed vegetables, puréed until smooth and served with sour cream, salsa, or a dollop of both.

Ingredients
- ●1 pkg Black Beans (soaked)
- ●1 Onion Chopped (approx 1 cup)
- ●3 T Margarine
- ●1 C Shredded Carrots
- ●1 C Chopped Celery
- ●5½ C Onion stock or other broth
- ●Garlic (approx 1 tb)
- ●Thyme (approx 1 tb)
- ●¼ C Lemon juice
- ●Sour Cream
- ●Salsa (if you want hot salsa)
Instructions

Saute onion in margarine for 5 mins.

Add carrots, celery, thyme and garlic — saute 5 mins more.

Add broth and beans — bring to a boil.

Reduce heat and simmer covered for 1½ hr.

Puree in blender or food processor — mix in lemon juice.

Serve with a dollop of sour cream.
