Black Bean Soup

A hearty black bean soup made with sautéed vegetables, puréed until smooth and served with sour cream, salsa, or a dollop of both.

Ingredients

  • 1 pkg Black Beans (soaked)
  • 1 Onion Chopped (approx 1 cup)
  • 3 T Margarine
  • 1 C Shredded Carrots
  • 1 C Chopped Celery
  • 5½ C Onion stock or other broth
  • Garlic (approx 1 tb)
  • Thyme (approx 1 tb)
  • ¼ C Lemon juice
  • Sour Cream
  • Salsa (if you want hot salsa)

Instructions

    Saute onion in margarine for 5 mins.

    Add carrots, celery, thyme and garlic — saute 5 mins more.

    Add broth and beans — bring to a boil.

    Reduce heat and simmer covered for 1½ hr.

    Puree in blender or food processor — mix in lemon juice.

    Serve with a dollop of sour cream.

    * For hot soup add salsa also.
